I love the rain. It always makes me think about feeling warm and cozy, sitting by the fire, and about the wonderful smells wafting from the kitchen. When I was 10 years
old my grandmother (Nana Lila) taught me how to bake this cake. I have been making it for over four decades now, and have perfected the recipe. Add a cold glass of milk or some freshly brewed coffee and you'll feel like you're in your own grandmother's kitchen.
Grandmother's Devil's Food Chocolate Cake with Velvet Icing
2 1/2 cups sifted cake
flour
1 1/2 t. baking soda
1/2 t. salt
1 stick unsalted butter, cut into pieces
2 cups brown sugar
2 eggs, lightly beaten
1 cup buttermilk
4 oz. semi-sweet chocolate chopped
2 t. vanilla
Pre-heat oven to 350 degrees.
Combine baking soda and flour.
In saucepan combine brown sugar, chocolate, 1/2 cup water.
Bring to a boil, stirring constantly.
Remove pan from heat.
Stir in butter until melted and let cool.
Add eggs, vanilla, and salt.
Beat in milk and flour mixture alternately.
Pour into 9" greased cake pans. (Dust with flour).
Bake for 25-30 minutes or until a cake tester comes out clean.
Velvet Icing
6 oz. semi sweet chocolate chips
1 stick unsalted butter
2 large eggs, beaten
In
a double-boiler melt chocolate.
Let it cool for 5 minutes.
Cream butter
and eggs.
Add cooled chocolate.
Beat until smooth.
To ice cake begin by spreading frosting on one layer. Place layer on top and frost sides first, then top.
