Who doesn't love a good cookie exchange? My friend Dina, puts on an extravaganza every year. She welcomes tons of friends into her beautiful home and each of us brings dozens of special cookies to
share. Of course we include the recipe. So, for my readers, here is one of the best cookies recipes...my mom's Double Chocolate Crinkle Cookies!
Double
Chocolate Crinkle Cookies
4 oz. unsweetened chocolate
1/2 cup shortening
2
cups sugar
2 teaspoons vanilla
4 eggs
2 cups flour
1/2 teaspoon salt
1 cup chocolate chips
1 cup powdered sugar
Melt unsweetened chocolate and shortening in a double boiler over hot but not boiling water. Stir continuously. Add sugar, mix, and cool. Beat until well-blended. Add vanilla. Beat in eggs one at a time. Mix well after each
egg is added. In another bowl sift flour, baking powder, and salt. Stir flour mixture into chocolate mixture. Stir in chocolate chips. Refrigerate several hours or overnight.
To bake cookies, pre heat oven to 375. Lightly grease baking sheets. Break off small pieces of dough and roll into 1" balls. Place powdered sugar in a bowl and roll cookie balls in it covering them completely. Place on baking sheet 2" apart. Bake 10 minutes. Cookies will be soft but will firm up as they cool. Cool on wore racks. May be frozen. Yield: 70 cookies.
